KAKARROT CAKE.
Ingredients: (Yields 2 mini loaves or 10 muffins)
2 eggs
2 tbs butter
¼ cup vegetable oil
¾ cup brown sugar
2 tbs honey
1 tsp vanilla extract
1 cup flour
1 tsp BS
1 tsp BP
¼ tsp salt
1 tsp ground cinnamon
1 tsp all-spice (cloves, nutmeg, etc)
1.5 cups grated carrot
Bake time: 45 min, 350F
Interested in Frosting? Using a hand-mixer, whisk 1/4 cup butter, 4oz cream cheese, 2 cups confectioner’s sugar (powdered sugar), and 1 tsp vanilla extract. Blend in fruit of your choice (ie. mango) for variety. Make sure cream cheese has been softened at room temperature to avoid lumpy madness. Frosting can be “injected” inside cake before baking, or plopped on after pulling out of oven. Yum.
