Meatballs never appealed to me, mainly because I always thought they were just…balls of meat. But sometimes balls of meat are called for - especially if you live with a carnivorous husband.

With the right ingredients, meatballs are AMAZING. Juicy, soft, and full of flavor. And you’ll never again crave those swedish meatballs from Ikea.

Gorgonzola, Figs, Scallions & Parsley

Crumbled Gorgonzola, Dried Figs, Scallions & Flat-leaf Parsley

LAMB MEATBALLS with FIGS & GORGONZOLA in a BALSAMICO-WINE SAUCE.

Ingredients: (makes 15 meatballs)

1 pound ground lamb
3 large organic dried figs, finely chopped
1 cup crumbled gorgonzola cheese
1 cup chopped scallions and/or flat-leaf parsley
1 egg
½ cup Panko
2 tsp ground cardamom
2 tsp ground cumin
2 tsp salt
1 tsp pepper

Sauce:
1 cup red wine
½ cup balsamic wine vinegar
1 tbs sugar
1 tsp chopped garlic
2 tsp cumin
salt & fresh black pepper to taste

Mix ingredients with fingers, then shape into small balls. In a pan, brown the meatballs - no need to cook all the way through. Once meatballs are golden, remove from pan. Keep the grease and jus - add sauce ingredients, and bring to a simmer. Place meatballs back into the sauce and keep on low heat for at least 30 minutes. Make sure to turn and coat meatballs evenly with sauce.

Also works well with ground pork. Serve with cous cous. Ab-fab!

frosted zucchini muffins.

Frosted muffins are not cupcakes. Everything just looks prettier with frosting.

Frosted & Healthy! WHOLE WHEAT ZUCCHINI MUFFINS.

Ingredients: (6 small muffins)

½ stick unsalted butter
1 egg
½ cup sugar
¼ cup milk
1 tsp vanilla extract

1 cup shredded zucchini
½ cup self-rising flour
½ cup whole wheat flour
1 tsp cinnamon
1 tsp all-spice

Bake Time: 30min, 350F

Simple vanilla or cream cheese frosting would be fabulous.

So. A rat ate my spatulas. This proves that rats are blind because, seriously, why would any creature with eyes…or taste buds…or a brain…start chewing on a big flat piece of rubbery plastic? Which also shows that Rat was desperate enough to eat anything in my flawlessly clean kitchen.

(Needless to say, destroyed kitchen utensils have been replaced with new ones, and all surfaces have been disinfected. Rodents have been punished accordingly.)
