eat more soba!

Soba (buckwheat flour) is genius. It’s a production to make Soba at home (requires gigantic rolling pins and lots of kneading power), but definitely a staple food in any Japanese household. And let’s talk Japan since this is a Japanese Cracker Blog.

High protein. High fiber. Low fat. Packed with nutrients and amino acids. Lowers cholesterol, reduces blood sugar…and oh-so-mighty tasty!

Soba in Peanut Sauce

SOBA with CHICKEN IN SPICY PEANUT SAUCE.

Ingredients: (2-3 servings)

5 oz boiled soba noodles

¾ lbs chicken cutlet strips
1 tbs sesame oil

3 tbs creamy peanut butter
½ cup chicken stock
1 tbs brown sugar
1 tsp sriracha sauce
1 tsp white wine vinegar
1 lime (squeeze for juice)
1 tsp chopped ginger
½ tsp chopped garlic

1 can boiled water chestnuts, sliced
½ cup fresh coriander and/or scallions

Stir-fry chicken in sesame oil, then remove from pan. Add rest of ingredients to pan with the heat off. Keep stirring until sauce is smooth. Return chicken to pan, add boiled soba noodles and water chestnuts, and top with fresh coriander and scallions. Squeeze lime. Turn on low heat to warm, or serve as cold salad.

Peanuts are high in protein, lower bad cholesterol, and are a good source of vitamin E. They also contain as much antioxidants as some of ‘em berries! FAB FAB!
