molapple, yo!
An apple and a cup of vanilla yogurt have been lounging in my fridge for some time. The yogurt belongs to McSpacey (aka the Hub), but of course he doesn’t realize it’s very close to expiring. Since I’ve been dying to open my bottle of molasses, I’ve decided to throw the three together for an Autumn Bash. Party in the oven, woot woot! (Where oh where has summer gone…?)

SPICED YOGURT-MOLAPPLE LOAF.
Ingredients: (2 mini loaves)
½ stick unsalted butter
1 egg
¼ cup brown sugar
¼ cup molasses
1 apple, small slices
½ cup vanilla yogurt
½ tsp vanilla
1 cup flour
½ tsp BS
½ tsp BP
¼ tsp salt
2 tsp all-spice
1 tsp cinnamon
Chopped or sliced almonds for topping
Bake Time: 50 min, 325F

Molasses is a by-product of refined sugar - the syrupy goodness of sugar before it’s stripped of its nutrients (magnesium, potassium, manganese, etc). For the ladies - also a good source of iron and calcium, woopee.
