avocado turns pop…!

If you are even slightly apprehensive of avocados, I would recommend that you stay away from these muffins. I’m pretty sure they could kill you.

Avocado Muffins

Super Moist, Super Sweet, Super Green: AVOCADO OATMEAL MUFFINS.

Ingredients: (6 muffins)

1 ripe avocado
1 ripe banana
1 egg
½ lemon
½ tsp vanilla extract

¾ cup flour
½ cup rolled oats
¼ cup Canola oil
½ cup sugar
½ cup honey
½ cup shredded coconut for topping

Bake Time: 20min, 375F

Mash bananas and avocado with fork. Squeeze the juice of 1/2 a lemon so that fruit will retain some of its color (and not turn an ugly brown). Add all liquid ingredients, then fold in the flour and oats. Top with coconut before baking.

Rilo Kiley

I also completely embrace the phenomenon of indie rock-turning-pop. Of course Pitchfork hates the new Rilo Kiley for this exact reason - so predictable. This album makes me want to put on some rollerskates and bake under my disco ball. Ooo aah!

    My Nanners are ALWAYS fridgenanated. Who wants to eat ‘em warm…unless they are baked, of course.
