What was originally supposed to be a yammy potato salad turned into some yammy croquettes instead - very yammy nonetheless. Yam yam.

YAMMY CROQUETTES with PANCETTA & CRANBERRIES.
Ingredients: (10 croquettes)
1 cup steamed yam
¼ cup feta cheese
5 slices pancetta
½ cup dried cranberries
½ cup organic alfalfa sprouts
½ cup barley, cooked in chicken stock
1 tsp thyme
Salt & fresh pepper
1 egg
½ cup flour
1 cup panko/bread crumbs
Mix all ingredients and shape into flat, oval patties. Dip and coat patties with flour –> egg –> panko. Deep fry until golden brown. So yammy! (Ok, it’s out of my system.)

Yams, in addition to fiber, are a good source of potassium, vitamins C and A, as well as vitamin B6 - which supposedly acts as a natural mood enhancer during those nasty PMS-lows. Up next, chocolate-coated yams…? Hmm…
