As chairwoman of the International Soba Council, I hereby introduce Nominee #2 for Soba Creation of the Year…

SOBA with ANCHOVIES AND ENDIVES in a MAYO VINAIGRETTE.
Ingredients: (2 servings)
5oz boiled soba noodles
1 can anchovies, drained
2 endives, sliced
1 diced tomato
½ cup scallions
- Mayo Vinaigrette-
4 tbs Mentsuyu
4 tbs mayonnaise
2 tbs vinegar
1 tbs vegetable oil
Salt & fresh pepper to taste
Sautee the anchovies in a small amount of oil. Add the cooked soba noodles, anchovies, endives, and tomatoes. Cook for 2-3 minutes on medium heat. Pour the mayo vinaigrette, and top with scallions before serving.
