jerky, eww!
One day, inside Kaka’s head…
Must use spinach. Must use parsley. Too green for husband. Must compromise.
Beef jerky!! (Genius!) And a cheese, a smokey one…gouda! (Oh Kaka, you were BORN to make spinach biscuits!)
(I hate jerky but these buttery biscuits exceeded expectations - so good! We had for lunch with slices of prosciutto.)

SPINACH BISCUITS with BEEF JERKY & GOUDA.
Ingredients: (6 Biscuits)
½ stick cold butter
½ cup all-purpose flour
½ cup whole wheat flour
1 tsp salt
1 tsp sugar
1 tsp BP
2 tsp shredded beef jerkey (Hickory)
½ cup smoked gouda cheese, thinly sliced
1 cup finely chopped spinach
½ cup chopped flat leaf parsley
(Optional: 1 egg for egg wash)
Bake Time: 20min, 375F
Jerky scares me; use a food processor to chop finely, like bacon bits. (In fact, feel free to replace with bacon bits - it’ll lose its smokiness, but I suspect it’ll be just as good.) Cheese can be sliced with vegetable peeler. Mix all ingredients (butter can be lumpy in batter), then shape into circles (1 inch thick). Egg wash is optional, if you want to get fancy.
