Debating between tequila sunrise and margarita - muffins, that is - I settled on a combo of both. Can’t go wrong with tequila, oranges, lime, and a heap of sugar - that spells fun in the kitchen! Yea!

TEQUILA SUNRISE MUFFINS.
Ingredients: (6 muffins)
1.25 cups flour
1 orange (1/2 cup juice + zest, supplement with OJ if necessary)
½ cup chocolate chips
4 tbs tequila
1 tbs margarita mix (can omit, replace with 1 tbs lime juice)
½ cup sugar (increase to ¾ cup if omitting margarita mix)
¼ cup canola oil
1 tsp BS
1 tsp BP
1 tsp vanilla extract
½ tsp salt
Bake Time: 20min, 375F
Grate zest of 1 orange, squeeze the juice and pulp - it should come to about ½ a cup. Don’t skimp on the chocolate chips, and keep your eye on the oven…these will brown faster than your non-alcoholic muffins.
