cornbread, experimenting.

Still going with the southern theme - cornbread. I love greasy garlic cornbread a la Jacques Imo’s, I love the spicy jalapeno cornbread at Great Jones Cafe…but more than anything, I love suuuugarrrrr. Say that again. Suuuuugaaaar.

Peachy Sweet Cornbread

PEACHY SWEET CORN BREAD.

Ingredients: (6 muffins)

½ cup polenta
½ cup all-purpose flour
1 cup corn
1 peach, diced
1 egg
3 tbs sugar
1 tsp BP
¼ tsp BS
½ tsp salt
½ cup fat-free sour cream
2 tbs butter
¼ cup oil

Bake Time: 20min, 375F
