cookin’ the arugula…
Arugula comes from the family Brassica, which includes broccoli and brussel sprout, among others.
Husband: Do you think Arugula is happy with his brothers?
Wife: No, because Broccoli’s the favorite kid. But he’s probably glad that he isn’t the reject Brussel Sprout. Arugula is just sort of…snooty.
(Brief Pause)
Husband: Arugula is like….
Wife: …a semicolon!
Husband: Exactly!
(Vegetables and punctuation are happily married, in this house.)

WHOLE WHEAT RICOTTA LOAF with ARUGULA, SOPRESSATA, and DRIED APRICOTS.
Ingredients: (2 mini loaves)
½ cup whole wheat flour
½ cup all-purpose flour
1 egg
¼ cup canola oil
¼ cup heavy cream
1 cup ricotta cheese
½ cup dried apricots, chopped
½ cup walnuts, chopped
5 slices sopressata
2 cups arugula, loosely packed
1 tsp BP
1 tsp BS
1 tsp salt
Bake Time: 30min, 375F

Arugula grown at this time of year can be a bit funky. The leaves are large and yellowing, and the signature peppery flavor can be a little more intimidating than usual. The sole purpose of baking this loaf was to see if these guys could withstand some heat. And the results are in- the firey bite is gone, with just a trace of its arugula-ness. Well done, my friends, well done!

don’t knock the semicolon, it has an important function in grammar. it helps when lists get out of control and it can be used to connect two phrases where a comma just won’t do…

So do you remember how the semicolon is referred to as the kid who “quietly practices playing the piano with crossed hands?” - see, there’s my arugula for ya! (Brilliant convo’s we have at the dinner table…I know.)
I love arugula– the fact that it has three names, and is a bit snooty-ish, and is ohsogood in salad, pizza, and undoubtedly your loaf. Bitterness is so yummy. Chinamini, KK is supposed to avoid arugula…
ps- Dave, I kept eyeing that book at the English bookstore in Firenze!
