Okay, time to get excited again! Here’s Nominee #3 for Soba Creation of the Year. And this one makes you all warm and fuzzy and happy. By the way, in case you’re interested, I can tell you that Nominee #2 is in the lead with a grand total of…one vote.

CREAMY SOBA SOUP with FENNEL, APPLES, and GROUND PORK.
Ingredients: (2 Servings)
1 bundle (2 servings) boiled tea soba
0.5 -1 lbs ground pork
1 fennel (bulb and stems), sliced
1 small apple, thinly sliced
2 cups stock
1 cup unsweetened soy milk
¼ cup heavy cream
½ tsp chopped garlic
Salt & Fresh Pepper to taste
Sautee the ground pork until fully cooked; flavor with salt and pepper. Add the sliced fennel (I like to use everything - the bulb, stems, and leaves) and apples, and cook until tender. Pour in stock and simmer until it boils down to about half the amount. Finish with garlic, soy milk, and heavy cream - you’ll also need a good pinch of salt at this point. Once the sauce comes to a boil, pour over soba. Bon appetit!
