kahluuuuuuuua!
Sometimes I’ll think of an awesome recipe in my head, and the actual product comes out even better than I imagined. On days like this, I pat myself on the back for being such a genius. Today I get to give myself that extra pat. Pat pat.
Inspired by Pao’s comment about my Tequila Sunrise muffins - “So can you actually taste the tequila in these?” (my answer was “not really”) - I decided to indulge in booze-infused baking to my heart’s content. And what better liqueur to use than the coffee-sugar-tastic blend of Kahlua?

KAHLUA MILK BRAN MUFFINS.
Ingredients: (6 muffins)
1 cup flour
½ cup bran
½ cup sugar
2 tbs condensed milk
½ cup Kahlua
1 tsp instant coffee (dissolve in a tiny bit of hot water)
1 egg
1 tbs butter
1 tsp vanilla extract
1 tsp BP
1 tsp BS
1 tsp salt
¼ cup chopped chocolate-covered espresso beans (for topping)
(Additional Kahlua for soaking)
Bake Time: 20-25 min, 375F
Once the muffins have baked, let them sit and soak in a dish of Kahlua (however much you want) and then place on rack to “dry”. You can also pour the Kahlua directly over the muffins if using baking cups. Mmm so moist.

On a different note, if anyone is interested in going to the NY Gypsy Festival on September 26th, I think only 5 tickets have been sold so far (2 of them are mine). Honestly, with such a spectacular line-up, I don’t know why you wouldn’t want to go: Balkan Beat Box, The NY Gypsy All-stars, and…BEIRUT! Ok, so I obviously only care about Beirut, but it’ll be worth it to see some All-star Gypsies.
