crêpes at cafe johjoh…

A few weeks ago, I emailed my beautiful friend Johanne, in Montreal, to send me this recipe. Joh and I worked together for a year, and we definitely had the most fun that any two people could possibly have in a classroom full of hyper-spastic kids. It started out with a pot of coffee with Rufus or Arcade Fire, and the rest was pure chaos - relentlessly making fun of helpless children, and then laughing at each other’s stupidity until we finally noticed the looks of confusion (“yes, your teacher is Cuh-RAZY!”).

Anyway, as Joh and I both loved to eat, we had a segment of our week dedicated to “cooking”. My favorite, by far, was Joh’s crepes…with maple syrup. I mean, who else gets to have crepes at work?

JohJoh's Crepes

Crêpes des Archambault or JOHJOH’S “FRENCH-CANADIAN CREPES”.

Ingredients:

1 cup flour
1 cup milk
2 tablespoon of butter (soften or melted)
2 eggs
½ tsp salt

Mix flour and salt. Add the milk and mix until you don’t see the flour anymore. Add the butter and eggs and mix it well. Pour just a bit at a time in a pan with a small amount of oil. (Don’t forget the maple syrup!)

P.S. Try teaching your kids to say “crepe”, the French-Canadian way. May I have some…crap? (Quoi???)
