Contender #4 is here, looking strong…maybe. I used smoked salmon trim - a lot cheaper and chunkier, but works just as well for this recipe. Try to avoid smoked salmon that is overly salty and keep the slices nice and small. Yum yum.

SMOKED SALMON & MOZZARELLA SOBA in a BUTTERY VINAIGRETTE.
Ingredients: (2 servings)
½ cup walnuts, chopped
½ cup smoked salmon trim
1 cup fresh mozzarella, thinly sliced
2 cups arugula (loosely packed)
2-3 bundles boiled soba
1 tbs soy sauce
2 tbs olive oil
2 tbs cooking sake
2 tbs balsamic vinegar
2 tbs butter
1 tsp chopped garlic
In a saucepan, mix soy sauce, olive oil, cooking sake, vinegar, butter, and garlic. Once the liquid starts to simmer, swiftly pour the sauce over boiled soba noodles. Toss with mozzarella slices, smoked salmon, and walnuts. Serve immediately.
