lazy girl’s curry…
Hello from the Land of Lazy.
My lethargy is passing, but I am still in slow-mo. I’ve been blaming my chills on the arrival of cold weather, but I’ve realized…it’s still 70 degrees outside. So then I thought…maybe it’s because I ate 30,000 pretzels on Sunday. And downed a bottle of Diet Coke. Dammit!

SCROD “CURRY” with QUINOA & LOTUS ROOT.
Ingredients: (2 servings)
1 lb scrod fillet, cut
1 onion, sliced
1 russet potato, thinly sliced
1 red paprika, sliced
1 cup lotus roots, sliced
1/3 cup quinoa
1 cup stock
½ cup dry white wine
2 tbs Garam Masala
1 tbs ground cardamom
1 tbs ground turmeric
1 tbs ground cumin
1 tbs butter
Salt & Fresh pepper to taste
Sautee fish and vegetables. Add liquids. Add butter, spices, and quinoa. Simmer until sauce boils down. Adjust flavor with salt and pepa. Lazy lazy bleagh.
