tarako homefries…

A few weeks ago, I was happy to discover that my hub could actually eat and enjoy Tarako (that’s ‘Tara’s child’ (aka salted cod roe) for ya). To satisfy my Tarako craving, my sis sent me some from home, hooray! - except it seems to have broken the seal. And let me tell you, it’s not an easy task trying to find Tara’s children in the city…

tarako homefries

TARAKO & KALE HOMEFRIES.

Ingredients: (2 servings)

1 red potato, diced
1 shallot, finely chopped
1 large clove garlic, chopped
1 cup kale, chopped
2 tbs Tarako
2 tbs olive oil
½ tbs butter
½ cup dry white wine
¼ cup half and half
Fresh pepper to taste

Sautee shallots and garlic with olive oil. Add the kale and white wine; steam until leaves are wilted. Put in the potatoes (preferably pre-boiled or steamed), butter, and cream. Once the potatoes have cooked through completely, turn heat off, and stir in Tarako. Add fresh pepper to taste.
