darjeeling unlimited.

Last week, a lovely friend gave us last-minute tickets to a preview of “The Farnsworth Invention”.  Amazing show -  although I kept waiting for them to break into song and dance.  And they never do!  Duh.  Anyway, still worth watching.

Another thing totally worth watching (if you haven’t yet) - “The Darjeeling Limited”.  It makes you want to consume Darjeeling like no other……but that’s just me, yes.

RICOTTA & DARJEELING WHOLE WHEAT MUFFINS.

1.25 cups whole wheat flour
4 bags (about 4 tsp) organic darjeeling tea, finely ground
½ cup low-fat ricotta
¾ cup sugar
4 tbs Canola oil
1 egg
¼ tsp salt
1 tsp vanilla extract
1 tsp BP
1 tsp BS

Bake Time: 20-25min, 350F

Note: I was in the mood to eat a crumbly muffin, since my muffins have been on the overly-moist side lately.  These are definitely crumbly.  Yum yum.
