“Is this…tikka masala?”

Ummm no, it’s gumbo!  Although, to be fair, the only thing “gumbo” about this recipe is the (a) roux, and (b) okra.  Not much else in my kitchen, currently.  And to be fair to myself, the husband wholeheartedly agreed that it tasted like gumbo…once I announced it.  Trust me, it was good!

CHORIZO & OKRA POSER-GUMBO.

Ingredients: (4 Servings)

½ cup flour
½ cup Canola oil

2.5 cups chicken stock
3 tbs tomato paste
¼ cup red wine
1 shallot, chopped
2 cups okra, sliced
4 chorizo sausages, sliced
½ tsp cayenne pepper
1 tsp dried oregano
1 tsp dried thyme
2 bay leaves
½ tsp garlic
1 tsp salt
Fresh pepper to taste

Stir flour and oil until dark brown (roux), on medium heat for about 15 min.  Add garlic and shallots to roux, sautee until tender.  Add wine, chicken stock, tomato paste, bay leaves, oregano, thyme, and cayenne pepper.  Boil until liquid thickens, then add chorizo and okra.  Add salt and fresh pepper to taste.  Increase chicken stock if consistency is too thick - this version is like stew.
