sweet-mustard chicken.

Perhaps my taste buddies are desensitized by the olfactory shut-down I’m currently experiencing (yes it sucks) - this chicken was very good, although somewhat (read: shockingly?) sweet.  Anyway, feel free to omit a tablespoon of honey and/or maple syrup if need be.  (I probably wouldn’t change it if I were to make this again.  Mmm can’t wait for round 2!)

sweet! mustard chicken

CHICKEN MARINATED IN SWEET-MUSTARD.

Ingredients: (2 servings)

0.5 lb chicken thighs
Pinch of cayenne pepper
Pinch of garlic powder
Salt and fresh pepper to taste

For Sweet-Mustard Marinade:
3 tbs Dijon mustard
2 tbs honey
2 tbs maple syrup
1 tsp organic orange marmalade
1 tbs mayonnaise

Bake Time: 50 min, 350 F

Mix ingredients for marinade, let chicken marinate for at least an hour.  Move chicken to a baking pan, sprinkle with garlic, cayenne pepper, salt, and pepper.  Bake for about 50 min, covered, in a 350-degree oven.
