I’ve been silently competing with a particular store-bought pumpkin muffin which I thought was perfect in terms of size, shape, moistness, and taste. And it only cost $1.69. Naturally, I ask myself……how do I make something better? Gotta glam it up, I guess.

PUMPKIN & MAPLE MUFFINS with WHITE CHOCOLATE CHIPS.
(Tastes like pumpkin pie filling. Too lazy to post recipe today.)
Back with the recipe….here it is.
Ingredients: (6 muffins)
1 cup pumpkin puree
1 cup all-purpose flour
1 tsp BP
1 tsp BS
¼ tsp salt
1 egg
2 tbs butter
1 tsp vanilla
3 tbs maple syrup
½ cup brown sugar
¼ cup Canola oil
1 tsp cinnamon
1 tsp all-spice
1 tsp nutmeg
2 tbs flaxseed, ground
1/3 cup white chocolate chips, chopped
Bake Time: 20-25 min, 350F

Can still do music…lazy music. And I don’t like little children voices singing, it’s creepy.
