sweet bread, sweet canadians.
Yesterday, we got a care package from one of the Husband’s readers in Canada - maple syrup! Everything about it was so cute (and sweet!), I had to take a picture…and then decided to make some bread while I was at it. Why not? Oh what joy Canada brings…

(Thank you George & Chrissy!)

CARDAMOM & WALNUT SWEET MAPLE BREAD.
Ingredients: (2 Mini Loaves)
1 tsp active dry yeast
½ cup warm water
1 tbs honey
1.75 cups whole wheat flour
2 tbs vital wheat gluten four
3 tbs milk
3 tbs maple syrup
1 tbs ground cardamom
1 tsp salt
1 tbs Canola oil
½ cup chopped walnuts
Bake Time: 25-30min, 375F
Dissolve yeast and honey in warm water; let sit for 10 min. Mix dry ingredients, then add the milk, maple syrup, oil, and yeast mixture. Knead on floured surface for 10-15 min, until dough is elastic. Fold in walnuts. Shape dough into a ball, coat well with oil, and keep in a covered bowl for at least 45 min (preferably in a warm place). Punch out air from dough, put into loaf pans, and let rise again for 15 min before baking.
