hooray, pork ribs!
Apparently, my husband is a model employee at work. Anyway, once I got over the images of Spongebob standing next to his wall of 374 “Employee of the Month” plaques, I asked myself - how could this be? My conclusion: it must be the muffins earning him all those muffin points…….! (Right?)
So some meat! meat! meat! for the hub! hub! hub! Sweet pork so tender that it melts right off the bone…

MAPLE & BRANDY BRAISED PORK RIBS.
Ingredients:
2.5 lb country style pork ribs (4 ribs)
6 cups stock
¼ cup brandy
½ cup maple syrup
3 cloves garlic
1 tsp soy sauce
Season pork ribs with salt and pepper. Sear all sides of the ribs in a large pot. Pour 6 cups stock (or enough to cover all the meat), along with the brandy, maple syrup, garlic, and soy sauce. Cover and let simmer for at least two hours.
