inari & peyton party!
Yet another SNF/theme-food party with my twin Shige, this time starring……inari-zushi! To think I used to be one of those obnoxious kids who just ate the sweet wrappers and left the rice on my plate…tsk tsk.
(Note: I know I’m watching too much football because I had a dream where I was dating Peyton Manning - a cooler, stoic, better-looking version. Sadly, I found myself in an unusually good mood when I woke up this morning…)

UNAGI INARI.
Ingredients: (2 servings)
10 inari wrappers
1 cup white rice
2 tbs cooking sake
2 tbs rice vinegar
2 tbs sugar
1/2 tsp salt
1 package cooked unagi, chopped
For extra vegetables:
2 tbs soy sauce
2 tbs mirin
2 tbs cooking sake
Simmer chopped vegetables of your choice in soy sauce, mirin, and cooking sake until tender. Meanwhile, cook 1 cup rice; once rice is cooked, add cooking sake, vinegar, sugar, salt, and simmered veggies. Add unagi and stir. Stuff pre-cooked inari wrappers (deep-fried tofu ‘pouches’, cooked in a sweet sauce) with rice. Serve warm or cold.
