I’ve been busy watching a clip of my husband getting jiggy in an elf suit. It’s too bad I can’t put up the link here (I already got in trouble once today), but I would be more than happy to send it to anyone who wants to see it. It will make your day, I promise.
Anyway, here’s a healthier alternative to mac ‘n cheese - made with soba.

SOBA ‘N CHEESE CUPS.
Ingredients: (6 cups)
1 bundle boiled soba
1 tbs butter
¼ cup flour
1.5 cup soy milk
2 tbs any soft cheese made with raw sheep’s milk
2/3 cup Pecorino Romano, grated
½ cup sharp cheddar, grated
Garlic salt & fresh pepper to taste
¼ cup cilantro leaves
Pre-heat oven to 350F. Break the soba noodles in half before boiling. In a separate saucepan, bring the butter and soy milk to a simmer. Slowly add the flour, making sure to stir continuously to avoid lumps. Keep heat on low to medium. Add soft cheese; stir until it melts. Add the remaining grated cheese, and keep stirring until the sauce has a thick, smooth consistency. Remove from heat, adjust flavor with garlic salt and fresh pepper. Toss with soba and cilantro, and pour mixture into well-greased muffin pans. Bake for 20 min or until tops are golden brown.
