yuzu-koshou chicken salad.
I have this love/hate thing with an Optimum Cable commercial (featuring a rapping water serpent) that has been playing in the New York area. I finally found it on YouTube, so I can share it with the world - it’s actually quite a spectacle. Now my husband knows why I’ve been going “four, four, four, FOUR!” (the last “4″ is actually an “8″, but I didn’t realize this until yesterday)…enjoy!

YUZU-KOSHOU CHICKEN SALAD.
Ingredients:
2 tsp Yuzu-koshou
2 tbs mayo
3 tbs plain non-fat yogurt
1 tsp honey
Dash of ground ginger
¼ cup walnuts, chopped
¼ cup raisins
½ cup cilantro, chopped
1 cup roast chicken
Combine Yuzu-koshou, mayo, yogurt, honey, and ground ginger. Add chopped walnuts, raisins, and cilantro. Toss with roasted chicken. Yuzu-koshou (”Yuzu Pepper”) is a paste of yuzu, green chili peppers, and salt - adds a citric/peppery bite from anything to meat to fish to soup to tofu.
