pick me up, tiramisu.
…although I don’t need to be picked up because it’s sunny again! Yessss! (cue: Happy Sunshine Music) I know I am constantly weather/temperature-obsessed, and my obsession now extends to the weatherman for the Fantasy Fix Live: Gary Archibald! He is the most suave weatherman in weathercaster history. Seriously. Go Gary!
So I made sponge cake on Sunday (yes, I went a little baking-crazy on Sunday, I think it was the Gary-effect. And I also unconsciously typed “spongebob” instead of “sponge cake”, go figure.) Anyway, keep it wrapped and unfilled - it’ll hold nicely for up to 3 days in the refrigerator. Enjoy!

A Basic GENOISE.
Ingredients: (8-10 inch pan)
4 jumbo eggs (6 medium eggs)
1 cup sugar
1 tbs honey
Pinch of salt
¾ cup cake flour
2/3 cup white rice flour
4 tbs melted butter
Bake Time: 30 min, 350F
With an electric mixer, beat the eggs, sugar, honey, and salt until mixture doubles in volume. Keep beating until mixture falls in thick ribbons. Sift the flours, and gently fold into batter. Add the butter. Pour batter into cake pan (well greased or lined with parchment paper) and bake for about 30 min. Spread with filling of your choice - this is a dense cake that is great for holding heavier fillings/soaking syrups. I opted for tiramisu, by request, but would have been just as happy with marmalade and whipped cream…
