apple blintzes, with tofu.
I was watching an episode of “New Jewish Cooking” on our TiVo the other night. It was surprisingly entertaining, mainly because I kept thinking the chef/host was like Tom Curran…if he were a Jewish Cook. Anyway, it inspired me to make some of my own apple blintzes - and all is happy in the neighborhood.

APPLE & PROSCIUTTO BLINTZ with TOFU FILLING.
Ingredients: (3-4 blintzes)
For the Crepes:
½ cup flour
½ cup milk
2 eggs
For the Tofu Filling:
½ package tofu, puree
2 tbs milk
2 tbs grated pecorino romano
1/8 tsp salt
Dash of pepper, nutmeg
In a sauce pan, heat the tofu puree, milk, and cheese - add salt, pepper, nutmeg. Place a slice of prosciutto, tofu filling, and apple sauce (boil 2 cups diced apples, 1/2 cup water, 1/4 cup sugar - if you want to make your own) onto crepes, and wrap. Fry blintz on buttered pan until golden brown. Serve with additional apple sauce.
