Cleaning, Day 2: Some stale bread, hunks of cheese…a savory bread pudding? *Badabing!*
And then it was quiche.

CHEESEY BREAD PUDDING-QUICHE with SHISO. Freakin Good.
Ingredients: (4 servings)
2 tbs butter
3 shallots, chopped
1 cup grated cheese*
¾ cup heavy cream
½ cup milk
2 eggs
¼ cup raisins (soak in brandy)
5 leaves shiso
2 cups crusty french bread, cubed
¼ cup panko for topping
*As this was part of my cheese-cleaning project, I used a variety of unlabeled cheeses that were hanging out in my fridge - cheddar, some kind of blue cheese, and gouda (I think).
Sauté the shallots in butter, about 2 min. Pour butter and shallots over grated cheese and stir. Add heavy cream, eggs, milk, raisins, shiso, and bread cubes - mix well until bread is soaked. Pour into buttered dish and sprinkle with panko. Bake at 350F for 45 min; broil for another 5 min or until top is brown. Gets a FG stamp of approval!
