what is a macaroon, anyway?
My definition of a macaroon (not to be mistaken for macarons, with the freakish colors): a big, crumbly cookie with a little pointy top.* Egg whites are involved, not much flour, a good amount of butter…and then there’s the coconut. They are definitely not pistachios.
Based on this limited knowledge, my macaroons turned out very uninteresting and matronly…as expected. I do have faith that, some day, I’ll be introduced to a life-altering macaroon - but until then, good bye macaroon!

MARCH OF THE MACAROONS. (They’re coming, they’re coming!)
Ingredients: (Yields 6-8)
1 lemon, zest
2 tbs condensed milk
1 cup sweetened coconut flakes
½ cup coarse bran
½ tsp vanilla extract
2 egg whites
Bake Time: 20 min, 325F
Mix lemon zest, condesed milk, coconut, bran, and vanilla extract. Whisk egg whites until stiff peaks form; fold with coconut mixture. Drop batter onto greased baking sheet and bake for about 20 min or until golden brown.
* Note: I think I was thinking of those little baked meringues - now I’ve got the facts straight.

The choco-macaroons from Whole Foods are pretty good. Although they’re not *my* favorite cookies, my sisters love them and eat them by the bucket.
