Whoooooo lives in a pineapple under the sea?
Sponge-bob-kaka-pants!
(I had no intention of posting this one, but it was a surprise hit. Plus it looks like a house that Spongebob Kakapants would live in…mmm.)

PINEAPPLE & CARDAMOM MUFFIN with BROWN RICE FLOUR.
Ingredients: (6 muffins)
1 cup brown rice flour
½ cup all-purpose flour
1 tsp ground cardamom
1 tsp BP
1 tsp BS
¼ tsp salt
1 egg
½ cup brown sugar
2 tbs condensed milk
8oz can crushed pineapple (in its own juice, preferably)
Bake Time: 20 min, 350F
Sift brown rice flour and all-purpose flour. Add cardamom, BP, BS, and salt. In a separate bowl, whisk the egg with the sugar and condensed milk; slowly stir in the flour mixture. Strain can of pineapple, and add the juice to the batter; the remaining pineapple should be packed into the bottom of the muffin tins. Pour batter over pineapples and bake for 20 min at 350F. (Note: I also added a layer of crushed graham crackers on the very bottom of the muffins; an excellent addition, in my opinion.)
