parsnip cake, yay or nay?

Parsnip looks like carrot. Parsnip tastes like fennel. There is carrot cake and there is fennel cake, therefore there can be parsnip cake.
(I know my food assessment/deduction skills are impressive, wow!)
Anyway, I still can’t decide whether parsnip should be incorporated into baked goods…but, oh well, why not.

CARROT & PARSNIP CAKE.
Ingredients: (2 mini loaves)
1 cup parsnip, finely grated
1 cup carrots, finely grated
2 eggs
½ cup sugar
3 tbs condensed milk
1 tsp vanilla extract
1 tsp cinnamon
1 tsp nutmeg
1.25 cup flour
½ tsp salt
1 tsp BP
1 tsp BS
Bake Time: 25 min, 350F
