dinner is pancakes!

As everybody knows, I am all adult. And the best thing about being an adult is that…you can have pancakes for dinner! Seriously. Booya!

(I guess adults don’t say things like “booya!”.)

amaranth pancakes

AMARANTH & WHOLE WHEAT PANCAKES.

Ingredients: (8 small pancakes)

½ cup amaranth grains
½ cup whole wheat flour
½ cup millet flour
½ tsp BS
½ tsp BP
½ tsp salt
1/3 cup milk
1 egg
1 tbs Canola oil

Pour 1 cup boiling water over amaranth and let soak for about 30 min, stirring occasionally. Drain amaranth, and mix with whole wheat flour and millet flour, BP, BS, and salt. Whisk in milk, egg, and canola oil. Cook each side until brown. Eat it for dinner, booya!

    The first time I spent the night at a friend’s house in Hawaii, her dad made waffles for breakfast and put a big scoop of ice cream on top and it was the biggest deal for me, whose health-conscious mom used to pack little dried fishies for snacktime on the natsukashino Big Playground (and thus eliminated all snack-sharing options for me… who wants to trade fruit roll-ups for almond fishies? You can’t wrap fishies around your finger and suck on it till it becomes a sticky, gooey delicious mess.). And oh, you’ve got two BSs in the recipe.

    p.s. I never offered my string cheese and Yakults?! Sorry I was such a selfish 3rd grader.

    My mom allowed string cheese. And Yakults. So I probably had those too.
