super(soup)bowl week begins…
As the husband is in Phoenix already, I’m celebrating Super Bowl Week by myself with my own Super Bowl of…Soup! HOORAH!
(I hope he takes a picture with Spike the Super Ball. I’m pretty sure I’m the only person in the world who was highly amused by the Spike Bio Page in the media handbook…)

GARBANZO BEAN & POTATO SOUP with CUMIN and BALSAMIC VINEGAR.
Ingredients: (4 Servings)
1 cup potatoes, puree
1 cup calabaza, puree
1 cup garbanzo beans
½ cup vegetable stock
½ cup soy milk
½ tsp salt
½ tsp balsamic vinegar
2 tbs honey
1 tbs ground cumin
2 tbs fresh goat cheese for topping
Freshly ground pepper
Boil or steam potatoes and calabaza until tender. Put in blender with drained garbanzo beans and vegetable stock; blend until smooth. Transfer contents to a pot, and add the soy milk, salt, balsamic vinegar, honey, and cumin. Bring to a simmer. Serve with a dollop of fresh goat cheese and freshly ground pepper.
