So in case you haven’t heard the big news, the hub has been named FANTASY FOOTBALL WRITER OF THE YEAR!! (Yes you can laugh. I did.) As funny as it is, it’s a legit award (unlike Hairiest Legs, Pale Male of the Year, Spaciest Man Alive…etc) - so let’s all throw some confetti and give him a nice pat on the back. Yeah!
Moving on. The mess below is something of a cross between a latke and a croquette - silky mashed potatoes with cod and watercress. The sauce is a roux base with millet flour (too grainy), red wine, worcestershire sauce, and some honey…and of course I lost track of the measurements.
Instead of a prettier picture, I’m going to stick to this one - a rare look at the creamy insides, only for lucky KKwac! viewers.

COD & WATERCRESS POTATO PANCAKES.
Ingredients: (4 Servings)
1 large white potato, steamed
½ cup onion, steamed
½ lb cod, steamed
1 cup fresh watercress, chopped
¼ cup grated Parmesan
Salt & Fresh Pepper
1 cup flour
1 egg
In a food processor, puree the steamed potatoes and onions until creamy. In a separate bowl, use a fork to break the steamed cod into flakes. Add potato mixture, watercress, and Parmesan. Season with salt and pepper. Let mixture cool, then form into small pancakes. Dredge with flour, then egg, and finally with Panko. Fry both sides in oil for 3-5 min or until golden brown.
