broccoli & yogurt chilled soup.

It’s offically Yogurt Week at KKwac!…maybe.  Go Yogurt!

Next up: Attack of the Kimchi Dollop.  (Why? Because it’s delicious.)

BROCCOLI & YOGURT SOUP.  CHILLED.  TOPPED WITH KIMCHI.

Ingredients:

2 cups Broccoli Florets, steamed or boiled
1 cup Non-fat Plain Yogurt
1/2 cup Chicken Stock (or Veg Stock)
1 small clove Garlic
Salt & Fresh Pepper to taste
Kimchi for topping, very optional but very recommended

Steam or boil broccoli florets until tender.  In a blender, mix the broccoli, yogurt, stock, and garlic; blend until smooth.  Season with salt and pepper to taste.  Strain mixture and reserve liquid.  Serve chilled.

Note: Broccoli - Yogurt - Kimchi is an awesome trio for your intestinal well-being.  Go intestines!

    Original indeed, my friend. Sounds like a creamy gazpacho, which I’m craving now with all this heat…
