tarako party, yeah!
Oh man, it’s been a while. Oops.

MAYO-KO EGGPLANT.*
Ingredients: (2 Servings)
1 Eggplant, sliced 1/2” thick
2 tbsp Tarako (Cod Roe)
1 tbsp Mayonnaise
1 tbsp Cooking Sake
2 tbsp Canola Oil
Mix together Tarako, mayonnaise, and sake. Baste both sides of sliced eggplants with canola oil, and place on sheet pan. Place tarako mixture on top of eggplants. Bake for 15-20 min in a 350F oven (toaster ovens work fine as well), or until tops are brown.
* Not to be confused with Mayuko Eggplant.

My two graduation dishes were…

1) A Mascarpone “Cheesecake” - which didn’t set very well at all. Hence the spoons…and the weird berry on top (I would’ve done without them if i had planned better). Although it did get some rave reviews from non-family/friends, which is always a good sign… (they were pretty freakin delicious).

2) Scallops with Parsnip Puree and Tossed Microgreens. Another big hit - actually I’m just assuming this, but they were gone so quickly that I forgot to try one (I did taste while cooking, but never ate the finished product). How did I manage to sear 80 scallops and not eat a single one of them?!
