So I made these bars yesterday that taste like Health. I was just going for a cakey granola bar…….

Gooey Pumpkin Health Bars.
Ingredients: (12-16 Squares)
2 cups Pumpkin Puree
2 Eggs
4 tbsp Butter, room temp
1/2 cup Sugar
1/4 cup Honey
1 tsp Vanilla Extract
1 tsp Cinnamon, ground
1 tsp All-Spice, ground
1 cup Rolled Oats
1/2 cup Quinoa Flakes
1/2 cup Whole Wheat Flour
1/2 cup All-purpose Flour
1/2 tsp BP
1/2 tsp BS
1/2 tsp Salt
Bake Time: 25-30 min, 350F

PUMPKIN & COCONUT SOUP.
Ingredients: (8 Servings)
2 tbsp Clarified Butter or Canola Oil
1 Onion, sliced
1 clove Garlic
1 Apple, cubed
2 cups Pumpkin Puree (canned is fine…)
1/2 cup Light Coconut Milk
2 tbsp Condensed Milk
3 cups Chicken or Vegetable Stock
1/2 tsp Cinnamon Powder
1/2 tsp Nutmeg
1/2 tsp Sage, dried
Salt and Pepper, to taste
Sweat onions, garlic, and apple until tender; add a little bit of stock if necessary to make sure they don’t burn. Transfer vegetables to a blender. Add pumpkin puree, coconut milk, and condensed milk. Blend. Return to pot and simmer with remaining stock. Season with spices; add salt and pepper to taste.
