With no one at home to take away the scissors, my bangs are starting to look a lot like Peggy Olsen’s………… but that has nothing to do with this soup.

(DAIRY-FREE) CAULIFLOWER & SAFFRON SOUP.
Ingredients: (4 Servings)
1 White Onion, sliced
1 head Cauliflower, florets
1 clove Garlic, sliced
Canola Oil
Vegetable Stock, as needed
1 tsp Saffron threads
Salt and fresh ground pepper, as needed
In a large pot, heat canola oil. Sweat onions, cauliflower florets, and garlic. When onions are translucent, add vegetable stock (enough to cover vegetables) and saffron threads. Let simmer until cauliflower florets are tender. Transfer vegetables and liquid to a blender; puree until smooth. Salt and pepper as needed.

Hello! Nothing exciting to report from The Mothership. It’s cold here in New York. I ache all over. My husband looks pastey. We watch Mad Men and drink soup. The end.

PUMPKIN & COCONUT SOUP.
Ingredients: (8 Servings)
2 tbsp Clarified Butter or Canola Oil
1 Onion, sliced
1 clove Garlic
1 Apple, cubed
2 cups Pumpkin Puree (canned is fine…)
1/2 cup Light Coconut Milk
2 tbsp Condensed Milk
3 cups Chicken or Vegetable Stock
1/2 tsp Cinnamon Powder
1/2 tsp Nutmeg
1/2 tsp Sage, dried
Salt and Pepper, to taste
Sweat onions, garlic, and apple until tender; add a little bit of stock if necessary to make sure they don’t burn. Transfer vegetables to a blender. Add pumpkin puree, coconut milk, and condensed milk. Blend. Return to pot and simmer with remaining stock. Season with spices; add salt and pepper to taste.

BROCCOLI & YOGURT SOUP. CHILLED. TOPPED WITH KIMCHI.
Ingredients:
2 cups Broccoli Florets, steamed or boiled
1 cup Non-fat Plain Yogurt
1/2 cup Chicken Stock (or Veg Stock)
1 small clove Garlic
Salt & Fresh Pepper to taste
Kimchi for topping, very optional but very recommended
Steam or boil broccoli florets until tender. In a blender, mix the broccoli, yogurt, stock, and garlic; blend until smooth. Season with salt and pepper to taste. Strain mixture and reserve liquid. Serve chilled.
Note: Broccoli - Yogurt - Kimchi is an awesome trio for your intestinal well-being. Go intestines!
