KKWAC! is officially back in business, hooray!! No doubt, it was a sad couple of weeks…but not as sad as this conversation from yesterday:

A GENIUS CELEBRATORY PIE - ONION & YOGURT!
Ingredients:
4 (about 4 cups) Yellow Onions, sliced
1 cup Non-fat Plain Yogurt
1 tbsp Organic Tahini
1 tbsp Garlic, minced
3 Eggs
1 tsp Salt
1 Pie Shell, 9”
Bake Time: 20 min, 400F
Sauté onions in pan until caramelized.* Let cool, then mix with yogurt, tahini, garlic, and eggs. Pour mixture into pie shell (may need to blind bake beforehand), and sprinkle with grated parmesan (optional). Bake for 20 min or until the mixture sets. Broil to finish.
* I ran out of time and couldn’t finish caramelizing my onions - this step takes at least 45 min.
